Wilted Swiss ChardIngredients:
1 bunch Swiss chard, leaves chopped for salad
½ pound bacon, diced
1 ounce sifted flour
¾ cup sugar
1/4 teaspoon salt
1 cup water
½ cup balsamic vinegar

1. Preheat a large iron skillet in an oven set to 400 degrees F
2. Cook bacon until crispy
3. Remove bacon to paper towel covered dish to drain and cool
4. Reserve 2 tablespoons of the bacon fat
5. Combine flour, sugar, salt and mix well with 1/2 cup water. Set aside
6. Heat vinegar and remainder of water to hot (do not boil)
8. Add the hot liquid to the dry ingredients, stirring well
9. Add the mixture to the bacon fat still in skillet, mixing thoroughly
10. Add the Swiss chard to the hot skillet, stirring with a wooden spoon to coat with the dressing, until it just begins to wilt.
11. Remove from the heat and devour immediately. If desired, you can crumble the bacon on top. (Photo shows the Swiss Chard being served with Golden Crispy Fried Duck.)
