Flatbread dough, prepared as listed under “Bread” click here for recipe
1/4 stick melted butter or tomato sauce (optional)
1 medium to large onion selected for flavor and sliced into rings (red onions have most heat and strongest flavor, white are mild heat and mild flavor, yellow are sweet)
basil, parsley, rosemary and other toppings to taste
Cheese(es) as desired
Pepperoni as desired

Directions:
1. Preheat oven to 450 degrees (or, light up the grill)
2. Roll out flatbread into an individual size portions
3. Coat with tomato sauce or melted butter, as desired
4. Distribute raw onion rings spread evenly to edges of the dough
5. Sprinkle with choice of cheese(es)
6. Top with pepperoni and Italian vegetable toppings
7. Place in oven and bake 35-40 minutes, or until the edges of the dough are nicely browned

Cook’s Note: This is a wonderful way to let your imagination lead your taste buds to try new combinations, and the individual flatbreads make it fun for everyone to make their own. Just put out ingredients, and make it a party!
