
4 to 5 chicken breast halves
2 tablespoons oil
1 large yellow onion
3-4 green onions
2-3 garlic cloves, minced
3-4 carrots, chopped
1 (16 ounce) can petite diced tomatoes
1 large can hominy (yellow or white)
6-8 cups chicken
Juice of 2 limes
2 teaspoons fresh, chopped cilantro
Salt and pepper
Cut chicken into cubes, saute in pot with oil, adding onion, garlic, carrots and celery. Add remaining ingredients and simmer on medium low heat, for 1- 1½ hours. May add more water if desired. Add salt and pepper to taste.

This is my version of a soup that I had at Abuello’s Mexican Restaurant. I love the lime and cilantro with the hominy and chicken.
