
Ingredients:
1 package pre-cooked frozen shrimp (I use a 16 ounce package of small salad shrimp)
4 hard boiled eggs, finely diced
½ cup onion, finely diced
½ cup celery, finely diced
½ cup salad dressing or mayonnaise
Small amount of prepared mustard to color
2 teaspoons sugar (or more if you desire a sweeter taste)
Directions:
Thaw shrimp under cold running water. Chop eggs, onion and celery into very small pieces, put into serving bowl with shrimp. Combine salad dressing, sugar and mustard. Fold into shrimp mixture. Chill. Serve with crackers. (I prefer Ritz)
This is another old recipe that has been around since we lived next door to the Flessners, on Sunset Ridge Drive (1970’s), in Danville Illinois. I haven’t made this for awhile, but Lance and I were just recalling how good it is just a few days ago. So I will probably make it again soon.
